Hey there fellow foodies!
Have you ever tried stuffed cabbage? If not, you're in for a treat! This dish is the perfect comfort food for a cozy night in. And lucky for you, I've got a recipe that's so easy to follow, you'll feel like a pro in no time.
First off, let's talk about the ingredients. You'll need a large head of cabbage (or two smaller ones if that's what you've got), olive oil, onion, garlic, mushrooms (optional), ground sirloin, long grain rice, parsley, tomato puree, salt, pepper, and some liquid (beef stock, cabbage water, or leftover tomato).
Once you've got your ingredients ready, it's time to get started. Bring a pot of water to a boil and add your cabbage. Make sure to cut out the core and place the cabbage core side down in the boiling water. Cover and let it simmer for about 10 minutes.
While the cabbage is simmering, sauté some onion and garlic in a pan with some olive oil. Add in some finely diced mushrooms if you like, and cook for a few more minutes. Transfer everything to a large bowl to cool.
Once the cabbage is done simmering, remove it to a baking sheet (keeping the water in the pot) and gently remove the leaves. Cut off the thick spine in the center of each leaf for easier rolling. Set aside the best 16 unbroken leaves and save the remaining broken or small leaves for later.
Preheat your oven to 350°F. Add the ground sirloin, uncooked rice, parsley, tomato puree, salt, and pepper to the cooled onion mixture and mix well.
Place about 1/4 cup of the meat and rice filling in each cabbage leaf, roll it up, and place it seam side down in a 13 by 9-inch pan. Pour some liquid over the rolls and top with some leftover cabbage leaves. Cover the pan tightly with foil and bake for 1 1/2 hours. Place the pan on a cookie sheet in case it drips.
Once done, take the pan out of the oven and let it rest for 30 minutes or even better, cool and refrigerate overnight. These stuffed cabbage rolls freeze well too!
